April 4th, 2014- April 13th, 2014

Wow, it’s been a loooooong time since I last posted! I truly apologize for the month long hiatus, but I promise it was for a good reason! Aside from being busy with school work, I’ve been doing a ton of traveling throughout Australia –which means that the next couple of blog posts after this will be filled with lots of information and really cool pictures! But before I get ahead of myself, it’s time for a recap of what happened between April 4th to April 13th!

4/4/14

I went for a quick walk along George St. and found myself at St. Mary’s Cathedral. This time I was able to go inside the cathedral and sneak a few pictures in!

4/5/14

A group of friends and I rented a van and drove to Royal National Park. It’s about an hour away from where I am in Sydney, but the ride was pretty scenic and it felt great to finally get out of the city. While at Royal National Park we went to Wattamolla, a cove and lagoon area within the park.

Fun fact: Wattamolla is an Aboriginal Australian word that means, “place near runnng water.”

After leaving Wattamolla we ate lunch and drove to a beach inside Royal National Park. Not sure what the name of the beach is, but I was able to go kayaking in it!

On the way home from Wattamolla and the beach, we couldn’t help but notice the beautiful mountains and green scenery all around us. We stopped the car and all of us got out to take pictures!

4/6/14

The time for me to cook flat dinner had finally come! For weeks I was stressing out about what to cook. I originally wanted to do something uniquely American, but I struggled trying to think of a “uniquely American” meal that was worth cooking. So then I decided that I would cook a Caribbean dish, similar to what my Kittitian grandmother regularly cooks on Sundays, but I couldn’t find any of the spices and ingredients that I needed. So after going back and forth with myself about what to cook, I decided to cook one of my favorite meals!: spiced chicken with pesto pasta, semi-dried tomatoes, and garlic bread. It came out great and everyone loved it!

4/8/14

Every year on April 8th, Ben & Jerry’s gives out free ice cream! As someone who regularly indulges in ice cream, I made sure not to miss this. Steffie, Paula, and I went to Ben & Jerry’s and waited in an incredibly long line for about 15 minutes before being served our free scoops. So worth it!

4/13/14

This Sunday it was Paula’s turn to cook flat dinner! Paula prepared chicken with mushrooms and rice, spanish omelettes, bread with a special tomato sauce, aioli, and olives. Yummy!

After flat dinner I went to my very first concert (all by myself)! One of my favorite musicians, Allen Stone, was playing at Metro Theatre off of George St. Allen delivered an impressive set and I was completely blown away by his talent and energy on stage. It was hands down, one of the best nights I’ve had since I arrived in Sydney. If you haven’t heard of him, please stop reading this post and go look him up on Youtube. Dude’s got mad soul!
